If you've been following our channel or website for a while, you know I am all about a fast and easy recipe.
This lemon chickpea curry is just that - easy, fast, and delicious.
I prefer a more milder curry but if you like a more spicy version add in red pepper flakes or select a spicy curry seasoning.

Easy Lemon Chickpea Curry (Mild)
[Makes 4 Servings]
Ingredients
1/2 cup chopped red onion
2 tsp minced garlic
1 tbsp vegetable broth
1 15 oz can of no-salt added chickpeas (drained and rinsed)
1 14.5 oz can of no-salt added diced tomatoes
1 tsp lemon curry powder (double if you like a strong curry)
1/4 tsp cumin
1/8 tsp ground ginger
1/8 tsp turmeric powder
1 tsp lemon juice (or more to taste)
Pinch of black pepper
1 tsp white miso (optional)
Cream Mixture:
1 cup unsweetened nondairy milk
1/3 cup raw cashews
Directions:
+Place chopped red onion, minced garlic, and spices in a sauté pan. Add in the vegetable broth or water to prevent burning/anything sticking. Cook until onions are translucent.
+Add in rinsed chickpeas and can of diced tomatoes into sauté pan. Bring mixture to a simmer and let chickpeas soften. (Simmer for around 5 minutes)
+Blend the cashews and nondairy milk in a high speed blender until smooth
+Add in lemon and cream mixture to sauté pan bring to a simmer.
+Turn off heat and stir miso into lemon chickpea curry.
+Serve over whole grain and vegetables
