Who loves a pesto full of flavor and is very easy to whip together? I do!
Both of these recipes are simple yet will make your taste buds sing.
Beautiful over whole wheat pasta, roasted veggies, pizza, or even as a salad dressing.
You can make either as thick or thin as you'd like by adding in a tiny bit of water at a time.
The perfect way to celebrate summer and use up all the basil you have overgrowing in your garden.

Pesto with Pine Nuts

Serves 2

Ingredients:
2 cups packed fresh basil
¼ cup raw pine nuts
1 tsp lemon juice
2-3 garlic cloves
1 tbsp white miso
1 tbsp nutritional yeast
2 tbsp of water (add more if you’d like a thinner consistency)
Directions:
Blend together all of the ingredients in a high-speed blender.
I prefer our pesto with pine nuts more on the chunky side.
Add more water to thin out the pesto if you desire.
Pour over whole wheat pasta, pizza, roasted veggies, or use a salad dressing.

Pesto with White Beans

Ingredients:
2 cups packed fresh basil
½ cup white beans (drained and rinsed)
1 tsp lemon juice
2-3 garlic cloves
1 tbsp white miso
1 tbsp nutritional yeast
¼ cup of water
Directions:
Blend together all of the ingredients in a high-speed blender.
I prefer the pesto with white beans on the thinner side.
Use less water if you’d like a thicker consistency.
Pour over whole wheat pasta, pizza, roasted veggies, or use a salad dressing.
Over roasted cauliflower is one of my favorite ways to enjoy these pestos.
