I adore this recipe because you can switch it up in so many ways- by adding in pumpkin seeds, dark chocolate, cranberries, or even chopped apples/pears!

Easy Pumpkin Cookies | Whole Food Plant-Based

Makes 12 cookies

Ingredients:
1 -15 oz can pumpkin (1 3/4 c)
½ cup unsweetened applesauce (or date paste)
1 tbsp pumpkin pie spice
1 tsp vanilla extract
1 tbsp ground chia seeds
1 tbsp flax meal
2 cups rolled oats
Optional:
Add in chopped dates, dark chocolate chips, dried fruit, or even diced apples/pears
Directions:
o Add all ingredients into a large bowl
o Mix ingredients until well combined
o Scoop out batter evenly to form twelve cookies on parchment paper
o Add in chopped dates or any other additional ingredients
o Bake at 350 degrees for 20-25 minutes
o Enjoy!

Thanks! I made these for my father and he liked them! He loves making pumpkin muffins
(with eggs and white sugar) and the whole foods muffins I've tried are too heavy to appeal to him. It occurred to me to try something different with the pumpkin which he can't compare. He's never had pumpkin cookies before. I used dates since he has a sweet tooth, and I buzzed the oats into almost flour, and added 1 tsp baking powder and 1/2 tsp baking soda, again, to make them more acceptable to him.
I don’t have ground chia. Anything else need to be modified if I skip that ingredient?
Brittany: Do you let the dough set to hydrate the oats or just bake right away?
