Easy Zucchini Bread (Plant-Based, Refined Sugar-Free, Oil-Free)

Do you have an abundance of zucchini this year?

I have just the solution to your problems.

Our easy zucchini bread which has no oil, refined sugar, and takes only a few minutes to mix together before placing it into the oven.

I love changing up the ingredients of our simple base recipe.

Swap out buckwheat flour for whole-wheat, spelt, or even almond flour!

Mix up our recipe with the add-in options by tossing in raisins, dried fruit, nuts, or even dark chocolate chips.

Leave us a comment and let us know what you add-on or even added on top of a finished slice!

P.s. Marc loves raw almond butter spread on his zucchini bread!

Don't know if I did something wrong but it had a strong buckwheat flavor....I'll try spelt next time. I have a question. How finely did you grate the zucchini and did you squeeze it to get a lot of the water out? I didn't.

You should always get the water out of shredded zucchini when making zucchini bread. I used the thinnest shred on my Cuisinart food processor and it turns out delicious and PERFECT!
