Our easy zucchini bread which has no oil, refined sugar, and takes only a few minutes to mix together before placing it into the oven.
I love changing up the ingredients of our simple base recipe.
Swap out buckwheat flour for whole-wheat, spelt, or even almond flour!
Mix up our recipe with the add-in options by tossing in raisins, dried fruit, nuts, or even dark chocolate chips.

Easy Zucchini Bread
(Refined Sugar-Free, Oil-Free, Plant-Based)

Ingredients:
o 1 cup oat flour
o 1 cup buckwheat flour (whole wheat flour or spelt flour will work also)
o 1 tsp cinnamon
o ½ tsp allspice
o 1 tsp baking powder
o 1 tsp baking soda
o 2 cups grated zucchini
o 1 flax egg (1 tbsp flax meal mixed with 3 tbsp water)
o ½ cup date paste
o ½ cup unsweetened applesauce
o 1 tsp vanilla extract
Directions:
o Mix together all dry ingredients into a large bowl (flours, spices, baking powder, and baking soda)
o Stir in the remaining ingredients and mix until well incorporated
o Pour into a parchment-lined loaf pan (or use a silicone loaf pan)
o Bake at 400 degrees for 40 minutes
o Let cool completely before removing
Optional Add-Ins:
Raw Nuts
Dried Fruit
Dark Chocolate or ½ cup of Cocoa Powder

Don't know if I did something wrong but it had a strong buckwheat flavor....I'll try spelt next time. I have a question. How finely did you grate the zucchini and did you squeeze it to get a lot of the water out? I didn't.
