Healthy Chocolate Chip Skillet Cookie

Today is my birthday! I wanted to share a recipe we enjoyed celebrating my 31st!


Our 'Healthy Chocolate Chip Skillet Cookie' along with vanilla nicecream has been a summer favorite. For my birthday I knew it was exactly what I wanted to enjoy.


I am so excited for you to try out how easy our recipe is and celebrate my birthday by filming a new YouTube video.

Healthy Chocolate Chip Skillet Cookie

Ingredients: 

1 - 15 oz can chickpeas include the liquid (around ½ cup of aquafaba)
1/4 cup of prepared powdered peanut butter or any nut butter 
3 large, pitted dates 
1/2 tsp baking powder
1/2 tsp baking soda
100% dark pure chocolate chips (around ¼ cup – ½ cup)

Directions: 

Preheat oven to 350 degrees.
In a high-speed blender combine all ingredients except baking powder, baking soda, and chocolate chips. 
Blend until smooth.

Stir in baking soda and baking powder.
Add chocolate chips to the top of the batter.
In a small 8-inch springform pan add cookie batter. 

Bake for 30 minutes
Let cool and remove from pan

 *Serve with vanilla nicecream! 

Vanilla Nicecream

Ingredients: 

½ cup plant milk
4 large frozen bananas 
¼ tsp vanilla (powdered or extract) 

Directions: 

In a high-speed blender, add in all ingredients and blend until smooth. 

Move nicecream into a sealed container and freeze until ready to serve.
