Oatmeal Cookies - Three Different Ways [Raisin, Chocolate, Pumpkin Pie]


I wanted to share one of my favorite treats I've been enjoying every week while losing over 70 pounds now!


Oatmeal cookies - however, I've made them with very few ingredients which are all wonderful at supporting a healthy weight.


Use any whole grain you have - rolled oats, steel-cut, or even oat groats!


Whole Grain Oats

Bananas

Spices

Add-ins like cocoa powder, pumpkin, raisins


Perfect for that evening treat some of us are looking for (I know I do!) alongside a cup of tea.


They also travel great and you can change up the ingredients so many different ways!

Oatmeal Cookies - Three Different Ways 
[Raisin, Chocolate, Pumpkin Pie]

Ingredients:
 
Raisin:
¼ cup raisins (make sure the only ingredient is raisins) 
1 ripe banana mashed 
1 tsp Ceylon cinnamon 
1 serving of cooked whole grain oats cooked(as directed of packaging) 
* Or one serving of raw rolled oats (as directed of packaging) 

Chocolate:
1 tbsp cocoa or cacao
1 ripe banana mashed 
1 tsp date paste (optional)
1 serving of whole grain oats cooked (as directed of packaging)
* Or one serving of raw rolled oats (as directed of packaging) 
 
Pumpkin Pie:
2 tbsp pumpkin puree
1 tbsp pumpkin pie spice
1 ripe banana mashed 
1 tsp date paste (optional) 
1 serving of whole grain oats cooked(as directed of packaging) 
* Or one serving of raw rolled oats (as directed of packaging) 
 
Whole Grain Oats such as steel-cut or oat groats will need to be cooked.

Rolled oats are raw for this recipe.  
 
Directions:
 
In a large bowl, add in all oatmeal cookie ingredients. 
 
Stir/mash well to incorporate all ingredients. 
 
On a baking dish lined with parchment paper, form cookies.
 
Makes 3-5 cookies.
 
Bake in the oven at 350 degrees for 20 minutes. 
 
Let rest for 10 minutes after before removing from parchment paper.

I loved the raisin ones. I could eat those all the time. I have a triple batch of just those in the oven now after making all three recipes. I found a TABLESPOON of pumpkin pie spice or cocoa powder was way too much. I wonder if it was meant to say a TEASPOON?

If you're wondering what "one serving" of oats are, your cookies should turn out great if you go by what your package says one serving is =). I just made these using raw rolled oats, and used 1/2 cup of oats. If you don't have a package, you can do an internet search to see what one standard serving is.

I buy my oat groats in bulk so I don't have package directions. Can I get a cup measurement, it would make it much easier. Thank you
