Our stuffed tomatoes recipe is a weekly staple here , especially during the summertime.
I love serving this for lunch or dinner and you'll be amazed at the volume of food it makes for one person.
Plus I always feel so fancy when I make this easy "gourmet" recipe.
Change up the beans/lentils and whole grains each week, you will never get tired of it!
Have extra filling left over, we always place it on a bed of greens for a delicious side salad.

Stuffed Tomatoes

Serving Size: 1
Ingredients:
3 large ripe tomatoes
1 small onion chopped
½ cup cooked whole grain (farro, bulgur wheat, quinoa, oat groats, etc)
½ cup cooked beans and or lentil
1 tsp white miso
1 tbsp Italian and or pizza seasoning
Dried chives or parsley for topping at end – Optional
Directions:
Preheat oven to 375 degrees.
Cut the tops of the tomatoes off and scoop the insides into a medium size bowl. *Discard the core and make sure you do not pierce the tomato.
Add in cooked whole grain and cooked beans/lentils to a medium size bowl along with the scooped tomatoes insides. Add in diced onion, miso, and Italian seasoning.
Stuff the mixture back into the tomatoes and set on a baking dish lined with parchment paper.
Bake for 10 minutes until tomatoes are soft.
Sprinkle dried chives on top and enjoy!
