Poutine is a Canadian dish made up of french fries, gravy, and cheese curds. Since being whole food plant-based I've been trying to recreate this comfort dish I loved prior and I have finally completed that goal.
I am so excited to share this recipe with you guys!
Our poutine recipe consists of three parts that you'll assemble right at the end for a truly amazing dining experience.
First up, lets make some french fries!
You can bake or air fry any type of potato for this recipe. We really enjoy russet potatoes that are coated with garlic powder, onion powder, and paprika.
Today I've used our air frier to cook the french fries at 400 degrees for 18 minutes.[Our Favorite Air Fryer Here - Breville Smart Oven Air]
My favorite three seasonings to use... for pretty much everything!
Next step is to make the Poutine "Cheese" Curds ... without using cheese! We are going to use white beans, ready to be impressed with our recipe?!

Poutine "Cheese" Curds

Ingredients:
½ cup white beans (cooked) drained and rinsed
¾ cup water
1 tbsp lemon juice
1 tsp garlic powder
1 tsp onion powder
1 tsp white miso (or salt)
3 tbsp tapioca starch or flour
1 tbsp nutritional yeast
Directions:
+Blend all ingredients well in a high-speed blender until smooth.
+Move mixture into a pot and heat on medium high
+Whisk constantly until white bean "cheese" curds becomes gooey/stretchy
+Remove off heat
Poutine Gravy

Ingredients:
2 cups vegetable broth
12 oz baby bella mushrooms sautéed
1/2 cup raw cashews
1 tsp thyme or sage ('Herbes de Provence' if you can find it!) 2 tbsp oat flour 1 tbsp onion powder 1 tbsp garlic powder 3 tbsp nutritional yeast 2 tsp white miso black pepper
Directions:
+Blend all ingredients well in a high-speed blender until smooth.
+Heat gravy in blender or on the stove top
Serve warm french fries with gravy and dollops of "cheese" curds!

this is so delicious! I use the poutine gravy on all my potatoes. Question though…I totally missed to sautee the mushrooms and just put them in the blender raw the last two times I made this and couldn’t tell a difference. Is that ok? I think I remember seeing somewhere you should always cook mushrooms…
