Whole Food Plant Based "Reese's Egg"

Before adopting a whole food plant based lifestyle or becoming vegan a 'Reese's Egg' might have been one of my favorite Easter candies to enjoy.

I've come up with a simple recipe of only four ingredients that is spot on for an 'Reese's Egg' copycat.


Refined sugar free, oil free, and nut free you'll be shocked to hear the main ingredients is well chickpeas!


I promise you that this recipe does not disappoint though.

Our version is whipped, delicious, and of course simple to create.

Whole Food Plant Based "Reese's Egg"

Ingredients:

1 15oz can of chickpeas, rinsed and drained

1 cup date paste

1 cup oat flour

Dark Chocolate (We love this brand)


Directions:

+Combined chickpeas, date paste, and oat flour in a food processor. Blend until well combined and texture looks whipped.

+Move "Reese's Egg" mixture to a bowl and place in freezer for 20 minutes

+On parchment paper spoon out "Reese's Egg" mixture into small egg shapes

+Freeze "Reese's Eggs" for 1-2 hours until frozen

+Melt dark chocolate and coat/drizzle over "Reese's Eggs"


+Keep in the freezer until you are ready to enjoy!

I loved these! I actually put 2 tbsp. cocoa powder in the mix instead of drizzling chocolate on top. I'm keeping them in the freezer - the consistency is really nice eating them straight out of there!
