Easy Chickpea Nuggets

We love finger foods here in the Jaroudi household and before becoming plant-based chicken nuggets were one of my husband (Marc) favorite Friday night dinner foods.


After we both transitioned to a plant-based lifestyle, Marc would still occasional want the 'Gardein Seven Grain Crispy Tenders' which are loaded with oil, soy protein isolate, and is a highly processed food.


My challenge was creating a Whole Food Plant Based recipe for a nugget that my husband would love. We both adore this recipe and not only does our 'Chickpea Nuggets' taste amazing but they are actually good for you.

Easy Chickpea Nuggets

[Makes 12-14 nuggets]


Ingredients

Chickpea Nugget

1 15.5 oz can chickpeas (rinsed and save the liquid from the can)

6 Tbsp of the chickpea liquid (aquafaba)

1 cup oat flour (blend rolled oats in a high speed blender to make flour)

1 Tbsp Italian seasoning or pizza seasoning

1 Tbsp nutritional yeast

1/2 tsp turmeric powder

1 tsp white miso

Pinch of black pepper


Breading

1/4 cup non dairy milk

1/2 cup whole wheat bread crumbs

2 tsp Italian seasoning or pizza seasoning


Directions:

+ Add all ingredients for the chickpea nuggets into a food processor and mix until everything is well combined. [Do not add breading ingredients!]


+Form nugget shapes with the mixture - makes 12-14


+Place 1/4 cup of non dairy milk unsweetened in a bowl

+Mix together whole wheat bread crumbs and 2 tsp Italian seasoning or pizza seasoning


+Create a dredge with each chickpea nugget - goes into non dairy milk and then into breadcrumb mixture


+Bake at 350 degrees for 40 minutes - Flip nuggets at halfway point

I love these! I made them in to sandwich size patties and added a bit of buffalo sauce to the mix and they turned out GREAT!! I chopped up leftovers and put in airfryer for 8 min to crisp them up for my salad.

I used Whole wheat panko crumbs and cooked them in the air fryer. We will make them again.

I just made these tonight. We were so excited as they looked so delicious. I liked the crispy exterior but the inner texture left something to be desired - soft, pasty and mushy. I would not make these again.
